PS DOM, our household has munched happily through your menu of dishes.
Chinese, Thai, Malaysian, etc.

How about adding an Indian dish, say a medium curry of worthiness? Plus, maybe a proper paratha bread. The only good paratha I've ever had in Hobart was at the old Singapore Eating House.
All the indian places round town cook them in the tandoor and they puff up like naans.
They should be cooked on a griddle plate and be layered and flaky.
